Zoodles with Four Cheese Pesto Sauce

Ingredients:

• Mascarpone cheese – 8 ounces

• raw zucchini noodles – 8 cups

• grated mozzarella cheese – 1 cup

• kosher salt – 1/2 teaspoon

• grated parmesan cheese – 1/4 cup

• grated Romano cheese – 1/4 cup

• ground black pepper – 1/4 teaspoon

• basil pesto – 1/4 cup

• ground nutmeg – 1/8 teaspoon

Directions for Cooking:

1) Lightly grease casserole dish with cooking spray and preheat oven to 400oF.

2) Place the zucchini noodles in a microwave safe bowl and microwave for 3minutes on high while uncovered. Transfer to a colander and squeeze outexcess moisture.
