Keto – Approved Egg Muffin Sandwich

 Cooking Time: 10 minutes

     Muffin Ingredients: 

  • • flax meal – 1/4 cup

    • grated cheddar cheese – 1/4 cup

    • free-range or organic – 1 large egg

    • heavy whipping cream or coconut milk – 2 tablespoon

    • almond flour – 1/4 cup

    • water – 2 tablespoon

    • baking soda – 1/4 teaspoon

    • pinch salt

    Filling Ingredients:

    • cheddar cheese or other hard type cheese – 2 slices

    • Dijon mustard – 1 teaspoon

    • butter – 1 tablespoon

    • ghee – 1 tablespoon

    • salt and pepper to taste

    • eggs, free range or organic – 2 large

    • Optional: 1 cup greens

    Directions for Cooking:

    1) Well almond flour, flax meal,, salt and baking soda mix in a small bowl. Stir in water, eggs and cream. Mix thoroughly. Make the Muffin

    2) Fold in cheese and evenly divide in two single-serve ramekins.

    3) Pop in the microwave and cook for 75 seconds.

    4) Place a small nonstick pan on medium fire, heat ghee and cook the eggs to desired doneness. Season with pepper and salt. Make the Filling

    5) Slice the muffins in half. To make the muffin sandwiches, Spread mustard on one side and cream cheese on the other side.

    6) Top with the other half of sliced muffin. Add egg and greens.

    7) Serve and enjoy.
