Keto Cauliflower Bacon Cheese Mash

 Parmesan cheese, shredded – 1 cup

  Diced bacon – 12 pound

  1 cauliflower head, sliced into florets

 MCT oil (medium-chain triglycerides) – 2 tbsp. 

UNSALTED BUTTER (ROOM TEMPERATURE) – 4TBS

 Apple cider vinegar, plus salt and pepper to taste – 12 tbsp

Direction :

Step 1 :- 

Cook the bacon in a large pan over medium-high heat, stirring periodically, for 5 to 10 minutes, or until uniformly browned. Reserve the oil in the pan and drain on paper towels.

 Step 2 :- 
Place cauliflower in a multi-functional pressure cooker (such as an Instant Pot) with a metal or silicone steamer basket. Fill the saucepan with 1 cup of water. Close the lid and secure it. Set the timer for 4 minutes and choose the Steam option. Allow for a 10- to the 15-minute build-up of pressure.

 3rd step :-
Pressure should be released slowly and gently using the quick-release technique according to the manufacturer’s recommendations, which should take around 5 minutes. Remove the lid by unlocking it.

4th step :-
Drain the cauliflower and place it in a large mixing basin. Combine the Parmesan cheese, butter, MCT oil, vinegar, and salt in a mixing bowl. Using an immersion blender, mix until completely smooth. Add the diced bacon and mix well. Add 1 to 2 tablespoons of the bacon grease that has been set aside.
